A Female on the Front Line

Spiced Shortbread Strips

1 ¼ cups all-purpose flour
3 tablespoons brown sugar
½ cup of butter (softened)
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
1/ teaspoon ground cloves

Pre heat oven to 325 degrees. In a medium bowl stir together dry ingredients. Using a pastry blender, cut in butter until mixture resembles fine crumbs and starts to cling. Using your hands, shape the mixture into a ball and kneed until smooth.

On a lightly floured surface, roll dough into a 6 X 4 inch rectangle about ½ inch thick. Using a utility knife, cut rectangle in half length wise then crosswise into 16 pieces. Place strips 1 inch apart on an ungreased cookie sheet. Bake in the preheated oven for 20 – 25 minutes or until bottoms just start to get brown. Transfer to a wire rack and let cool. Makes 16 strips.
